Living in VT, working out of my car, and training for a tri and a half.  Sound interesting?  It sure is.


Dear Blog World,

  Due to my new job responsibilities and relocation to beautiful Vermont, I will no longer be blogging.  Thanks for the past 2 months and I will remain to follow my favorites : )



Seriously, my 45min car ride home took a whopping 2 hours today.  Thanks Mother Nature, really appreciate it.  There were trucks, and cops, and wires down everywhere.  What made it even more painful was that I didn’t get to run today (expect double time tomorrow) and all the traffic started less than 10 miles away from my apartment.  Driving less than 10 miles in an 1hr and 15 minutes?  I can run faster than that!!



I was also like to give a special thanks to the Girl Scouts of America for providing me with delicious boxed cookies to come home to and down my sorrows in after a tough commute.  Just kidding…I only had 2.


My mission to run this evening after work wasnt complete but you know what mission was?  Finishing the pan of veggie shepards pie I made last Thursday night in under a week.  Solid.


I added a little spinach to jazz it up, had some grapes, and of course a massive chickpea blondie on the side.



This afternoon I snacked on a multi grain rice cake with pb and 1/2 of a sliced banana.


I also sampled a handful of these bad boys…


Kay’s Natural Protein Chips in chili nacho cheese flavor.  Not going to lie, they were amazing but I’m pretty sure I fulfilled my sodium intake for the next week with just one handful.  It was hard to tell they were considered healthy.  Or maybe I am getting the word “healthy” mixed up with “gluten free.”  110 calories per serving (the bag had 1.5 servings), 5 grams of fat, and 9 grams of protein.  As much as I liked them, I think Id rather just splurge on the real thing, Cheeze-Its… 

After my awesome ride home, cooking dinner was the last things I wanted to do.  Not to mention now I only had an hour till Lost.  I cooked up 2 egg whites, topped them with salsa, Franks Red Hot, nutritional yeast, and ate them over a bed of mixed greens.

Finally the rain is gone!

This morning I decided to sleep in the extra 2 hours and since its nice out today and stays light later, I’ll go for a run after work.  I’m shooting for 3-4 miles, nothing crazy.  Lost is on tonight and I plan on being in bed 9pm sharp!

I had about 1/4 bag of spinach and 1/4 bad of mixed greens in my fridge that were going to go bad so I threw them in my blender this morning with 1/2 of a banana, 1/2 scoop vanilla protein powder, and 1 cup of almond milk for a mini GM.

I also had 1/3 cups oats with 1 cup blueberries and a sprinkle of flax for something a little more filling.  This morning I also added 1 egg white into my oats before microwaving.  I noticed that Naomi does this from time to time and decided ro give it a try.  Would have never known it was there!

I love how on days I don’t work out in the morning, the hungrier I am.  Doesnt make sense!  Does this ever happen to you?

My mid morning snack today was a small container of Light ‘N Fit vanilla yogurt, a 1/2 tablespoon of Bees Knees PB, and some sliced apple. I also sipped on some Detox AM tea

Back to my day….

Well that do you know, more bday cake at work!  I only took a few bites then threw the rest out, its was store bought and you know how I feel about that.


Lunch today was leftover fish and veggies over mixed greens and a gigantic pickle (wayyy too sour, only had a few bites).



And lunch is ever compete without a chickpea blondie.  seriously, cannot get enough of these guys!


This afternoon I snacked on Chobani with high fiber cereal and the most perfect grapes ever, nice and crisp.  I think I went a solid 3 days without Chobani, that’s a new record…



Dinner tonight was leftover shepards pie, asparagus, and ofcourse……….a chickpea blondie, or 2. 


I’m doing good with finishing that pan, down to my last serving!

All rain is miserable. Seriously.  Needs to stop.  And I’m going back out in it to meet a friend for a drink.  Not going to lie about it, sweat pants and bed sounds a whole lot better right now…

I thought yesterday was bad, today was even worse!  When my alarm went off this morning I want nothing more than to stay in bed for a few more hours.  I couldn’t even get the dog to go outside!  She had to be carried down the stairs, plopped on the sidewalk, and coaxed to take out 5 minute walk around the block.   Miserable…


At the gym this morning, I did 20 minutes on the treadmill for warmup running between 6.0 and 7.5mph playing with the incline throughout the run.  I ran about 2.5 miles before hitting the weights.  Today I did some upper body and abs….

  • Shoulder press: 3 x 12 with 20lbs
  • Fixed pulldown: 3 x 15 with 50lbs
  • Seated bicep curl: 3 x 12 with 20lbs
  • Pectoral flys: 3 x 12 with 40lbs
  • Seated row: 3 x 12 with 40lbs
  • Tricep pulldown: 3 x 15 with 10lbs
  • Back extensions: 3 x 13 with 85lbs
  • Reverse crunch on bench: 2 x 15
  • Regular crunch: 2 x 15
  • Extended leg/arm crunch(?): 2 x 15 with 5lb dumbbells


I feel like I’m getting stuck in my diet eating almost the same things everyday.  This week I am going to try to switch things up and amp up my protein a bit.  Breakfast #1 was 3 egg whites with nutritional yeast and 1/3 cup oatmeal with 1 cup blueberries (boring!).


Bfast #2 was a whole grain rice cake with my Vermont Peanut Butter almond butter/peanut butter blend and 2 scoops vanilla protein powder in 12 ounces of water.


I’ve really been loving the Celestial Tea samples that I received last week.  So far they have soothed my stomach and has helped me fall asleep.  This morning I gave the “Detox AM” a try.  I was really looking forward to trying it especially since it has a creamy vanilla flavor.  Seems like a strange flavor for tea huh?

Yes, It’s pretty miserable outside.  Once I finally dragged my hungover butt out of bed for the second time (yes, after my morning post I hit the sheets again) I geared up to take the dog out, made a shopping list, and hit the gym.  Seriously, I can’t handle my booze like I used to.  A glass of wine and a few beers in a 5 hour period and I felt terrible all day? Fail! Well, at least I made it to the gym…

Since my breakfast didn’t really stay with me this morning (if you know what I mean…) I was starving when I got up for the second time.  I snacked on some pretzels with hummus then had some veggie shepards pie (determined to eat the whole thing and not waste), and a little piece of chocolate chickpea blondie I pulled out of the freezer. 




At the gym I chugged some water and got on the stationary bike for 35 minutes at the random setting, level 11. Yup, that’s about all I could handle.  I stretched and did 50 sit ups on the stability ball then ran out the door and to the g-store.  Since I did a really large shopping  few weeks ago,  just needed some fresh produce and a few randoms.  I picked up the usually apples, bananas, bag-o-lettuce, grapes, sweet pots, yogurt, asparagus, and splurged on some nutritional yeast, whole grain rice cakes, and a piece of swordfish for dinner tonight. 

For dinner I  just baked the fish plain in the oven at 350 for about 30 minutes. When it came out I topped it with tomato sauce and nutritional yeast and had a side of steamed broccoli and asparagus.  I wasnt super hungry because I may/may not of had a piece of bead at Whole Foods and more pretzels and hummus (deadly combo) while making dinner. Then I had a couple Thin Mints…



I hate losing an hour of sleep.  It’s on feels like 8:30 to me, its definitely 9:30, and 4:45am is going to come way too fast!  Since I had great success with the “Tummy” tea this morning, I decided to go round 2 with Celestial Seasonings and give the “Sleepytime Throat Tamer” a try.  No, I do not have a sore throat, “sleep” is the key word.

On a side note…While biking today I read an article in regards to having enough iron in your diet.  Since I don’t eat chicken or beef I try to included a lot of low-fat dairy, nuts, and fish into my diet as well as tons of fruit and vegetables, but am I getting enough?? I have been feeling pretty sluggish lately and am not sure if its diet related or just stress with the shenagians (all good shenaigans) going on with work.  Needless to say, I did a little more reasearch in the web and while at the store today I picked up a bottle of 28mg iron supplement.  The smartest thing to do would be to contact my doctor and get some blood work done.  But seriously, who really has time for that??  Ill just let myself panic, give the supplements a try, and see if my energy levels and/or feelings change.
